The first session ended to the applause of the 15 participants, as our new teacher Stéphane Lochon won over our palates with the authenticity of the wines presented, from small estates and made using traditional methods.

Yes, the horse has reappeared to plough, or rather scratch, the soil; yes, fertilizers are disappearing, grass is reappearing between the vines, earthworms are returning to help the sub-soils breathe and thus the roots, and following the moon's cycle is once again a must for winemaking.

More and more women are making their mark in the world of wine

Yes, dear male colleagues, women have a sensitivity that we men don't, and their noses are undoubtedly finer when it comes to blending grape varietals. From the great châteaux of Bordeaux to the small estates of Roussillon or Beaujolais, women are the future.

Winemakers, sommeliers, cellarmen and oenologists, they represent the new face of wine. Once kept away from the cellars, often in the shadow of their fathers or husbands, women now occupy an increasingly important place in the wine world.
